- in my younger time as a pastry chef (then not so long ago) a tour of la maison du chocolat with Robert Linx...he has an incredible way to talk about the chocolate. it probably pushed me towards what i am doing right now. that philosophy of achieving a balance instead of an "in your face" flavor, stuck to me.
