One Christmas, about 25 years ago, I enjoyed homemade English toffee at the home of friends. It started me on a quest to make the perfect toffee combining the toffee's crunch, almonds, & chocolate. After perfecting the butter toffee part, I began the best phase of the experiment: finding the right chocolate. I continue to this day, tweeking & improving the recipe as my tastes evolve.
