- Most memorable chocolate experience:
- First time I tempered by hand was an experience in school and I learned that CHOCOLATE was to be taken seriously. I have since learned how to work with it more and love it, but have found out that I have HOT HANDS that work much better with sugar than with chocolate. I sometimes I have had to work in the cooler to keep things cold!

Candied Bacon-Chocolate Chunk Cookies
Ingredients:
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
8 tablespoons (1 stick) unsalted butter, cold, cut into 1/2-inch pieces
1 large egg
1 teaspoon pure amoretti vanilla extract
1/2 teaspoon baking soda
1 1/4 cups all-purpose flour
