Hello, fellow chocolate lovers and all those reading The Chocolate Life!
I am relatively new to the world of chocolate and would appreciate any advice you were willing to give me.
May I please ask a favor?
I am looking for a contract chocolate manufacturer in either the US or Colombia who can produce 85 % plus cocoa, gluten-free and allergen-free batches (certified).
Can anyone suggest someone?

Comment by Clay Gordon on September 29, 2011 at 8:07pm I understand your concern here. It's a lot easier to say "made in a facility that does not process nuts, dairy, and soy" and also "gluten-free." These could be verified by lab testing.
I just want to be clear that you're limiting the allergens to dairy, soy (including lecithin - you'd substitute sunflower lecithin, if used), tree nuts (actually in the tropics most common would probably be limited to Brazil and Macadamia nuts), peanuts, and gluten.
And while we're on the subject, what kinds of quantities are you thinking of?

Dairy?
Soy?
Because of basic bioindividuality issues it is impossible to be 100% guaranteed allergen free - some people are apparently allergic to chocolate.

I was reading older post, and came across yours. We stared importing couverture chocolate from Colombia, Luker Cacao. They are based in Bogota and work with Colombia beans. They manufacture 85% origin chocolate, you can visit our site:
