Rambling through the cheese section of the new Whole Foods market in Pasadena is an excerise in delerium. Should I get the sharp farmhouse cheddar I know? Should I try the oozy sheep’s milk raw I’ve never heard of? Blue with veins or white with orange rind??? Then, the little cheese that was meant for me appeared. Cardona with a cocoa powder rind. What a miracle of subtely - no sharpness to the flavor of the cheese, no bitterness from the wrapping of the cocoa. Richness all around. How did they do that?? I met Stephanie at the Fancy Food Show. Small (and delicious!) world. I'm hoping to do a story on them for Zester Daily (new food/wine/culture site launching in August). Will keep you posted!

No - Thalassa Skinner (editor) is one sister-in-law and Stephanie Skinner (publisher) is the other.

NO WAY!! That's so cool! I just had dinner with Elaine & Kate (editor & cheesemonger). Are they your family/friends?? Culture is a great magazine - original & informative & so yum to look at.
