I am setting up a new small artisan chocolate company in England. If I had access to so me good Guatemalan beans I would consider a profit-share with the farmer. As you say, I think it is the fairest way to progress.
My company will launch later this month - I have a factory and all the equipment and am waiting for approval from the Environmental Health people before I launch in public. I visited Guatemal last year and would love to offer Guatemalan chocolate for sale in Europe.
