You just convert it immediately to fiat. It's just another income source from people who do not own a paypal/bank account. No need to worry about volatility. You can use bitpay or coinbase to accomplish that.

It points to a whole other way of infusing flavors. The nibs were very moist with the lees/wine sediment before processing and had an incredible aroma. 

Will be experimenting with other origins too.

Thanks for the input Clay. I like the solar panel idea and will experiment. We are on stand alone solar at home and have a few smaller panels I can play with plus a 12v portable fridge.

Thanks for your note. My dissertation focuses on the politics of language and music in Cape Verde and the Cape Verdean Diaspora. My research on chocolate is part of a newer project on the politics of food, though it involves many of the same issues. I'd be interested to learn more about what you might have in mind for The Chocolate Chronicles. I tried adding content to the Discover Chocolate Wiki, and could not get it to work. Ive developed several websites from the ground up, & consider myself at least a little bit internet savvy, but simply cannot figure out how to make it work. Is it not yet functional? Perhaps the instructions for how to add your company could be a little clearer...
