Steven, apart from the chocolate alchemy web site, which I did indeed learn everything that I needed to know about chocolate making, there is one book that stood out above all the other books that I bought, which explained a lot of the science behind why and how chocolate works. No surprise, it's called "The Science of Chocolate" by Stephen T Beckett. Most of the other books out there are recipe books.
