I was at The competition at The French Culinary Institute today and I thought your work was amazing. The colors were beautiful and your sculpture was well done. I was wondering what the figure on the top of the sculpture was? I thought it was a butterfly shaped with gears. If it was in any case it was thought provoking. Nice.

Any advice for a future pastry chef that wants to learn more about working with chocolate would be appreciated much.
