Are you working at the culinary institute or are you at a restaurant ? I would like to try your creations! Let me know if this is possible. I am going to be in Denver this week April 14- 17 (at the Lowes Hotel) and would be happy to meet you and let you try my favorite Xocai Healthy Beligian Chocolate! 505-259-8302 Barb Forshay
I was at The competition at The French Culinary Institute today and I thought your work was amazing. The colors were beautiful and your sculpture was well done. I was wondering what the figure on the top of the sculpture was? I thought it was a butterfly shaped with gears. If it was in any case it was thought provoking. Nice.
Any advice for a future pastry chef that wants to learn more about working with chocolate would be appreciated much.
Best wishes and congratulations on making it to NYC. Your work and style is inspiring to all of us that are new to pastry and the world of chocolate.
