Hi Uncle Patrick... so you want to make chocolates ? from scratch ? You need some great quality, food grade cocoa butter and some organic cocoa powder. Agave syrup is the best for sweetening or you can use honey. Actually, I love it unsweetened. Rich and bitter. Then you can mix in nuts and raisins etc. yum ! dad and I have opened a shop here in Ipswich and I am selling the Raw Chocolate bars that I have been making. It's a very simple recipe, nothing fancy but customers really love it. If that's what you want to do, go for it ! hugs, joey
