This picture is me holding a cut open cacao pod to taste the pulp on a real woking cacao plantation in Mexico. Im the happiest little chocophile on the planet right then!
I have FABULOUS photos of my Oaxaca trip with Elaine and I will definitly post them ASAP- pics of not only the plantation but the town and several choc shops as well as a real working Mexican choc factory in progress! oh wow it was just incredible to be that close to the source of such goodness.....
I LOVE cinnamon almost as much as choc- have not tried them all but was thrilled to find Cinnabon made some new chocs using their own Makara cinnamon they grow exclusively- the description is:" Rich Makara Cinnamon mousse topped with crunchy glazed pecans and toffee bits, drenched in dark choc goodness!" Quite possibly the best flavor combo ive ever had- also comes in a milk choc with cinnamon caramel- found them at Walgreens. Ended up buying 6 boxes!
I've heard quite a bit about Elaine Gonzalez's trips to Mexico but have never made it a priority to go on one. I'd love to learn more, especially if you have photos or video. I agree with you, cinnamon is a great flavor in chocolate. Have you ever experimented with different kinds? Saigon cinnamon tastes very different from cassia cinnamon for example.
