There are a bunch of interesting loopholes in the methodology being employed to verify that the butter expressed from the liquor does not exceed 118F. (Anyone care to comment on these?) However, the fact that is stays more than 30 degrees below the magic 118 number suggests that, while the temperatures may not be precise, they are probably not that far off.
