Fresh Out of the Oven: Caramel Brownies!
A wonderful "from-scratch" fudge brownie with bits of our 61% dark chocolate delicately marbled with our homemade caramel creme.
We know that as delicious and beautiful as our chocolate confections are, sometime you have a chocolate craving that a delicate truffle just can't satisfy. In response, we labored over a hot stove (literally!) to create the perfect brownie. Inhabiting the delicious space between fudge & cake, this brownie has it goin' on: chocolate & caramel in a chewy, moist brownie... need I say more?

We hold our "Children's Story Hour" on the second Thursday of every month. Parents may bring their little ones to enjoy a chocolate story, chocolate coloring pages and our fresh baked sugar cookies dipped in warm milk chocolate. Moms/Dads get to enjoy samples of our chocolates and the event is entirely free.

Parent Magazine contacted us to conduct an interview for their magazine. Chad Young wrote an excellent article about our story hour. He described it saying:

When we opened our doors today we had enough excited parents and children to fill our little house three times! Luckily, the day was beautiful for playing outside & we had more than enough cookies to go around. Each group loved hearing the humorous story of
Curious George Goes to the Chocolate Factory and the children were thrilled to dip soft sugar cookies in chocolate. The parents enjoyed their artisan chocolate samples as well!
As we saw the last group out, we were positively giddy with the laughter & joy that still lingered from all of those happy families.
It was a great morning!

June/July/August Schedule
Intro to Chocolate
"Intro to Chocolate" is a class for true chocolate aficionados and those who want to learn more about the cornerstone of chocolate work: Tempering Chocolate.
Over a cup of delicious hot chocolate, we will begin with a discussion of the history & production of chocolate. We will enjoy learning how to taste fine chocolate and will put that knowledge to use with a solid chocolate tasting. Additionally, we will learn how to perform the often elusive yet always rewarding skill of tempering chocolate. Students will bring home their tempered chocolate to show off their newly found talents!
Intro to Truffles
If you are looking for a lighthearted introduction to chocolate making then "Intro to Truffles" is for you.
We will begin the morning with instruction in truffle production over a cup of hot chocolate. We will learn about confections, the differences between chocolate makers, & a general "who's who" in the chocolate world. We will cap off the discussion with a tasting of dark chocolate truffles from around the country. Finally, we will get our hands in the chocolate and practice dipping ganache centers. Students will take all of their fine creations home to enjoy!
Chocolate Together
We have "Chocolate Together" classes for both children and adults. These classes are designed to provide a fun environment to learn & experience chocolate making in pairs.
Families Chocolate TogetherA class for parents and children to enjoy together. We focus primarily on the hands-on fun of chocolate making with an assortment of delicious chocolate treats to create.
Friends Chocolate TogetherA class for friends, couples, and coworkers to enjoy together. Perfect for a girls night out! Each pair will learn the art of chocolate tasting & enjoy a tasting of fine dark chocolate. Additionally, each pair will create a variety of chocolate treats to take home or enjoy on the spot!

Its michelle-Jo your new Aussie aquaintance ( oh no..that sounds formal!) Just thought Id let you know I joined the site and bought that book on ebay for $39!!!!! You have inspired me to get as much training and knowledge as I can before we move back to start my own business....yay! speak soon
I read in one of your posts that you took the ecole chocolat course. I have been contemplating doing that. I too am self taught and I have been working with chocolate for more than than ten years now ( mostly making truffles and cakes). I am slowly setting up a small business, getting orders here and there. I was just wondering how much I would benefit from taking the ecole chocolat course. I would appreciate any input from you.
