Dagoba - Conacado 73%

I received another bar of Conacado from my friend Chris at HSN today. I am still going to rate this a 3 because I have had much better bars. But is seems that this bar is not quite as harsh this time. Weird almost baking soda taste in the finish, but otherwise an ok bar of chocolate.

Lindt - Excellence 70% Dark

Deep and dark smell with a bit of cherry. Flavor is earthy, citrus, and maybe raisins. Not too bitter or drying for a 70% bar.

The San Francisco Chocolate Factory - Wine Lover's Chocolate Dark for Port

Tastes like a Callebaut or Guitard blend. Good chocolate flavor and smooth mouth feel.

Michel Cluizel - Mangaro

Awesome bar of chocolate! Smooth, somewhat sweet flavor. Citrus, cherry, and earthy tones.

Valrhona - Caraibe

The age of the bar may have led to my lack-luster rating. This one had been sitting in my stash for at least a year. The bar was bloomed (to be expected), but still had a nice snap. No major flavor hits in the profile, however I did taste some tannins (drying), and nuts.

Welcome to The Chocolate Life. I've worked with Jacques on many occasions and he is a great guy - one of the most gracious people I have ever met in a business filled with gracious people. What fun it must have been to work on a showpiece with him.
