I attended culinary school and studied patisserie and baking. One day our instructor (chocolatier), told us to bring in different types of chocolates to taste and compare. Someone brought in an Italian chocolate that I tasted. A few minutes after I ate it I felt absolutely euphoric! I felt like I was floating 2 feet from the floor. This feeling lasted about 2 minutes but it was the best chocolate experience I ever had!
A couple of years ago I experimented with some of our local wild berries and made some jellies for people to taste. I added them to my chocolate collection that I had put together. There is a berry here that the locals call "laughing berries". They are salal berries and are extremely flavorful. People use them to make jams and jellies and pancake syrup.
